Basic Yeast Bread
1/4 oz yeast
1 cup of warm water 110 degrees
3 tbsp sugar
2 tbsp shortening
1 large egg
1/2 tsp salt
3-3 1/2 cups flour
Put yeast in warm water and let bloom for about 5 minutes until you can see a froth beginning to form on the top. Then mix in sugar, shortening, egg, and salt. Put flour in a little at a time until it all comes together to form a soft dough. Cover with a clean cloth and place in a room place for 1 hour or until doubled. Punch down then kneed 8-10 times. Makes about 24 clover rolls or garlic knots. Bake at 400 for 10 - 12 minutes.

Chicken Tortellini Alfredo
I fed a family of 5 and 2 toddlers off this recipe and had about 1 1/2 cups left over.
3 boxes of dried tortellini, I used DaVinci Multicolored Cheese, cooked according to package
2 tbsp olive oil
4-5 chicken tenders
2 tbsp butter
1 large finely chopped clove of garlic
1/2 cup of frozen spinach
1 large rough chopped tomato
6 large button mushrooms sliced
1 jar Alfredo sauce
Put 2 tbsp of olive in large skillet, add chicken and cook until done through. Remove from heat and chop into a small bite size. Add butter, garlic, spinach, tomato and chicken in skillet. Cover and cook over medium low heat about 10 minutes. Add mushrooms and jarred Alfredo sauce. Simmer uncovered about 5 minutes until sauce is heated through and the mushrooms have cooked down. Pour over warm pasta and combine. Top with more diced tomato as garnish.
